
There’s something undeniably special about waking up on Christmas Eve morning – that mix of excitement, calm, and “almost there” anticipation. This baked oatmeal captures all of that in one warm, fragrant dish. The bright touch of a medley of berries wrapped inside cinnamon-kissed oats feels like winter sunshine in a pan (warming up even the coldest day in Albany, NY!). It’s easy, nourishing, and exactly the kind of healthy winter breakfast my families are always asking me for in my Albany family medicine practice. It fills the house with the smell that makes everyone wander into the kitchen asking, “What are you making?”
This recipe is wonderfully versatile: cozy enough for breakfast, wholesome enough for a snack, and festive enough to pass as dessert with a dollop of protein-rich plain Greek yogurt. It’s a true December keeper: simple, comforting, and bursting with holiday cheer – perfect for busy moms, caregivers, and everyone they care about looking for easy meal prep ideas during the holiday season.
1. Preheat the oven.
Set your oven to 375°F so it’s warm and ready to welcome a holiday bake.
2. Mix everything together.
In a large bowl, combine the oats, milk, eggs, frozen berries, maple syrup, cinnamon, almond extract, baking powder, and salt. Stir until everything is evenly coated.
3. Pour and smooth.
Pour the mixture into a greased 8×8 baking dish, spreading it into an even layer.
4. Bake to golden perfection.
Bake for 30–35 minutes, until the top is lightly golden and the oatmeal is set but still soft inside.
5. Serve warm.
Cut into squares and enjoy it warm – as is, with some plain Greek yogurt or added protein, or even drizzled with a little extra maple syrup for some added sweetness.
