
There are two kinds of weeknight dinners:
1)The ones that feel like survival and,
2) The ones that somehow make you feel like you have your life together.
This is firmly in the second category.
Recently, I came across this recipe for Steak Bites with Miso Ginger Dressing from The Woks of Life, and I can’t stop thinking about how flavorful it was.
It’s simple enough for a busy weeknight, but feels just a little bit elevated, like something you’d order out and then immediately try to recreate at home. Balanced and flexible, it’s the kind of meal that feels nourishing and satisfying without requiring a ton of prep or time to create during the week.
Inspired by this recipe from The Woks of Life.
For the dressing:
1. Prepare the rice. We love a rice cooker in our house for set it and forget it perfect rice every time!
2. Make the dressing. Blend together all dressing ingredients until smooth.
(The original recipe called for a raw shallot and garlic which was delicious but had a strong aftertaste, so we recommend without those ingredients especially if you’re cooking this for the kids).
3. Cook the steak
4. Sautee the vegetables. In the same pan that you cooked the steak, sautee the bok choy and a cut onion.
