(This month’s recipe of the month was inspired by and adapted from a Korean BBQ wrap recipe by Instagram creator @jalalsamfit. We adjusted the marinade, lightened the sauce, and tweaked the slaw to fit our family’s taste and ingredients).

We grew up eating Korean food on the daily in my Korean household growing up, and so these tasty, high protein, and most importantly easy to make Korean BBQ-inspired chicken wraps surprised me! They’re sweet, savory, a little spicy, and wildly satisfying. Perfect fresh for dinner or as a leftover lunch.

For the Chicken:

Ingredients (makes ~8–10 wraps depending on size)

• 3 to 3.5 lbs boneless, skinless chicken thighs – trimmed and cut into bite-sized pieces
• 2 tsp kosher salt
• 2 tsp black pepper
• 2 tsp garlic powder
• 2 tsp onion powder
• ⅓ cup gochujang (Korean chili paste) – you can purchase this at a Korean food store, like Jang Tuh Asian Grocery in Latham, but they also sell it at Trader Joe’s – look for it in the sauce section
• ¼ cup honey (or maple syrup)
• 2 tbsp low-sodium soy sauce
• 1 tbsp sesame oil
• 3 to 4 cloves fresh minced garlic
• 1 to 2 tbsp sesame seeds

Instructions

1. Preheat oven to 400°F.
2. Mix all marinade ingredients in a large bowl.
3. Toss chicken thoroughly and let marinate at least 20 minutes (longer if you can).
4. Spread evenly on a parchment-lined sheet pan.
5. Roast 25–30 minutes until cooked through and slightly caramelized.
6. Rest 5–10 minutes, then enjoy with creamy gochujang sauce, crunchy quick slaw (see recipes below), and flour tortilla wraps.

Creamy Gochujang Sauce – whisk the following ingredients together until smooth

• 1 cup plain Greek yogurt
• 2–3 tbsp mayo (just enough for richness)
• 1–2 tbsp gochujang
• 1 tbsp honey
• ½ tsp garlic powder
• Splash of milk to thin

Crunchy Quick Slaw – toss together and let sit for at least 10 minutes

• 1 large English cucumber, thinly sliced
• 1 cup shredded carrots
• ¼ red onion, thinly sliced
• 1 tbsp sesame seeds
• 2–3 tbsp rice vinegar
• Pinch of salt
