We love love love Superhero Muffins in our house because they’re easy to meal prep for the week, toddler AND adult-approved, and a great way to sneak veggies into breakfast and snacks.
Our version is inspired by the popular recipe in the Run Fast, Eat Slow cookbook by Olympic marathoner, Shalane Flangan and Elyse Kopecky. In their cookbooks, there are multiple variations to make the most of seasonal flavors and keep things interesting.
